Cooking with Bob: Risotto

Whether you’re coming home from work or on your way back from a horseback ride, this quick risotto recipe will hit the spot!

Although I’m known for my steaks and overall meat-cooking abilities (like my hard-to-forget bolognese), this cooking demonstration features a simple risotto that is easy to recreate with a good pan and a few key ingredients.

Risotto is a type of Italian rice with a toasted outside coating made with a scallion or onion, vegetable stock, and a little patience. With some olive oil, butter, and even a bit of wine, this recipe is sure to leave you wanting more.
